I know of a couple places down in Del Mar.
I do english, hunters or jumpers. Mainly jumpers. But i'm down for western too. Haha hell im down to clean stalls if it means being around horses and the smell of them again. I've been without horse for like... not even a month and im already having withdrawals haha
Oh alright. There are actually tons of stables a lot closer than Del Mar. Lets see what I can pull up.
These are the ones I know: Mystic Equine
I know a lot of the people that ride here and the trainer. They are all pretty awesome, but they do mostly focus on Hunters, and have recently been doing a bit of jumpers with their students. Its a small facility, but it means that everyone is a little closer with each other. They compete once a month cause the show grounds are right across the street, though the instructor does stick to lower level (2'6" and down) I don't know your experience, but if your looking to go beyond that, this stables might not be a challenge for you. Where I'm boarding now. The trainer does mostly hunter/jumper and will go up to higher levels for the students. They do english/western if you care to play in both. There are more people here so it is possible to maybe get into turning horses out / helping out around once you get to know people.

(Little bit of everything) <----This place looks awesome, but it was a little farther than I wanted to board at.
There are TONS of stables off of Littler Gopher Canyon Rd in Bonsall. There are also a lot in fallbrook, just got to look them up online.
