My qh (honest 14'3) has short legs and long body, and her canter (when she's balanced of course) is very nice and feels "controlled" (if you know what I mean). Your horse may be either too fast (my paint used to be like that - wanted to run, run, run until we started working on her moving properly and listening to the rider), or she's unbalanced and has very short stride so it indeed "feels" fast.
In either case I'd look for the help from the trainer (read, some lessons with the good instructor
). You'll need one anyway if you want to teach her correctly to jump.
