Hunter Hack

I want to show my gelding in hunter hack with jumps but I don't really know if it'd be a good event for him. He has jumped and has jumped quite big (even though I am aware the jumps are quite small) but I am still unsure of him being a hunter. He has a good frame and he collects and extends quite well and has a hunter look but I don't know much about hunters, as I have never shown before.
What do they judge you by and what can I do to get him ready? Also grooming tips would be good even though this isn't a grooming thread. His only problem is that he will shake his head or paw when halted for too long.

I know the saddle pad should be shaped like the saddle but all I have is a square pad and the fitted one I have is ripped and nasty. Is the square pad okay for very low level hunters? I don't want pentalized for the wrong attire but I'd rather use that then a nasty ripped pad
