It is a Rocky, so yes. Keep her mane. I have never seen a rocky with a roached mane.
Three gaited and five gaited are terms used with American Saddlebreds. Three gaited means the horse does three gaits, which are walk, trot, and canter. No different than a QH. Most Saddlebreds are three gaited. Five gaited is when the horse can walk, trot, canter, and perform the two trained gaits which are the slow gait and rack.
Saddleseat rules I would believe are breed specific, so check your breed rules. The seat is pretty much for the misfit breeds, or at least is treated as such. There is no all encompassing set of rules that all types of horses who use the saddle use. Yes, basic horsemanship, equitation, and attire, are used, but there are vast differences I have seen in going from a Saddlebred show, to a rocky show, to a TWH show, and so forth.
Contact you breed registry and they should be able to point you to or send you a rule book.

This defiently helped me out.. ALOTT. I didnt know the thing about 3 gaited and 5 gaited haha.. Idk if I have any questions besides training for the slow canter.. Thanks(:
