What can I say? I'm a total sucker for good down home southern cooking and canned goods!
Besides, I can't get good cat head biscuits and sweet tea around here!

Ya know, now I'm adding pepper jelly to the list, I've never done that, now I must.
I can't live anywhere that doesn't have decent biscuits..oh wait, yes I can, because I'll make em myself! I'm on the fence about the persimmon, I'm going to test it out on the hubby tomorrow.

Great job! I'm about to start canning my Romas. I took the initiative to transplant about 50 volunteer tomatoes that sprang up around my cistern and in last year's tomato raised bed. I put them in the new asparagus bed on the south wall of the garage, and on the old cattle fencing left by the street. We've been eating cherries since mid-June. I've NEVER had tomatoes this early before. I've been watering almost every day, and we started eating beefsteaks about a week ago.
I'm not going to start canning this year until the temperatures abates some, and then only in the morning. We've had almost a month straight of over 100 degree heat indexes, and I think I'll keep over in the kitchen adding hot water to the mix! =b

I canned alot at 3am, to keep it cooler. I have a small cake business and I bake those at 3am as well. Sleep and I are not friends.
I have some mators left, and this is probably the end of them...I think I'll make salsa tomorrow.

Yum! Haven't started here yet. Did shred & freeze a bunch of zucchini to make bread & pies with later & made some pickled beets - that I don't have to share, it doesn't bother me a bit that my hubby thinks beets taste like dirt (?).

You guys are making me jealous! I don't have the room or sunshine to grow hardly any veggies. Guess I could rototill up my back lawn.

Anyway, I just want to say I admire your initiative and creativiity in doing all this and keeping the art of canning alive!

What's funny is I live in the middle of town in a little subdivision. My horses live at my inlaws on land galore...but I don't want to drive over there to garden daily, so I planted it here. My mom and I did this when I was a kid...and I just can't stand to let it die. I notice the older I get the more like mom I get..that's scary.
