Same way there are hundreds of varieties of mice colors/coats. A random mutation appears and is bred for. Some extinct birds bred, a random genetic mutation occured while the DNA was being copied in the first few cell divisions (or even in one of the parents gamete) and the cells divided to create... chicken! Inside the egg, which then hatches
