I'm not in FFA, but my kids were and I've been a supporter for years.
I've seen them done each way you thought of. When my kids had melt downs after getting their packets, they took a break and then just started pulling the info together, one step at a time.
You can keep track of hours on a calendar. And keep copies of pay checks or the pay stubs if the check comes with one. If you're paid cash, write the amount received on the calendar day you received it.
Typed is nice unless your handwriting is really nice. If you don't have access to a word processor, I can't imagine being docked for that. I've seen both narrative styles (paragraphs) and QA format. More important to address each point than how you do it.
You will be fine. And you will have every right to be proud of your finished project.
