Coming into summer, I'm sure a lot of us eat a bit differently than we do in the winter. Lots of grilling, fresh produce.... it's making me drool just thinking about it! Post your summer-inspired recipes here!

Mango Salsa
(super easy and nummy)

1 large mango
2 avocados
2 med. sized tomatoes
1/4(ish) cup green onions
1/4(ish) cup bunch cilantro
1/2 medium lemon
1-2 tablespoons olive oil
Dash of sea salt

Finely chop first 5 ingredients, and mix together in a bowl (add green onion and cilantro to taste.) De-seed half a lemon, and squeeze the juice into the bowl. Add a few sprinkles of sea salt, and oil, and mix well. Serve with tortilla chips or crackers or bread, even. You can also add other fruits such as strawberries. *Even better if left to marinade overnight!

(sorry, crappy cell phone pic)

Greek Phyllo Pastry
(super super easy, and really delish. From Williams Sonoma "Cooking for Friends" or something like that...)

1/2 package Phyllo pastry
1-2 medium-sized tomatoes
1 tablespoon fresh oregano
1 tablespoon fresh Thyme
1/3 cup feta cheese (crumbled)
dash of sea salt and pepper

Preheat oven to 400*F. Roll out half package of phyllo to about 9x11" and 1/8" thick on a lightly floured surface. Cut the pastry in half and create a rim (frame) around the pastry by folding a half inch back onto the pastry and pinching it into place. Thinly slice tomato and place on top of the phyllo. Dice oregano and thyme, and spread evenly on top of tomato. Sprinkle feta cheese on top next. Sprinkle a small amount of fine ground sea salt and pepper over the pastries. Put in the oven for 15 minutes or until golden brown. Cut and serve right away.

Oooh this is a great one!
My boyfriend and I are all about the BBQ. If it can be grilled, in our house, it's gonna be. Also, on Sunday mornings, all our friends come over and we cook a HUGE breakfast (we're talking bacon, ham, sausage, eggs, toast, homefries, fruit, omelettes, etc) to have a relaxing morning and catch up. But I gotta list my favorite summer recipes below..

Sparkling Strawberry Lemonade

Sea Glass Candy (I'll throw this on a dish on our kitchen table.. it's so fun to make!)

Pie in a Jar (so cool and easy)

Grilled or Pan Roasted Pork Tenderloin in Honey Lime Chipotle Marinade

Fruit Pizza (very nice, easy to use LOCAL produce, great for potlucks!)

Marlboro Man's Favorite Sandwich (oh my goodness. make it. asap. like, now.)

Broken Glass Jello (so, so, SO amazing)

Cherry Limeade

Blueberry Turnovers (easy and nice for breakfast when we're running out the door to work)

Anyways some of them are more like meals then anything else, but this is usually what I cook in the summer.. When I'm not on a horse I'm in the kitchen!
