Coming into summer, I'm sure a lot of us eat a bit differently than we do in the winter. Lots of grilling, fresh produce.... it's making me drool just thinking about it! Post your summer-inspired recipes here!
Mango Salsa
(super easy and nummy)
1 large mango
2 avocados
2 med. sized tomatoes
1/4(ish) cup green onions
1/4(ish) cup bunch cilantro
1/2 medium lemon
1-2 tablespoons olive oil
Dash of sea salt
Finely chop first 5 ingredients, and mix together in a bowl (add green onion and cilantro to taste.) De-seed half a lemon, and squeeze the juice into the bowl. Add a few sprinkles of sea salt, and oil, and mix well. Serve with tortilla chips or crackers or bread, even. You can also add other fruits such as strawberries. *Even better if left to marinade overnight!

Greek Phyllo Pastry
(super super easy, and really delish. From Williams Sonoma "Cooking for Friends" or something like that...)
1/2 package Phyllo pastry
1-2 medium-sized tomatoes
1 tablespoon fresh oregano
1 tablespoon fresh Thyme
1/3 cup feta cheese (crumbled)
dash of sea salt and pepper
Preheat oven to 400*F. Roll out half package of phyllo to about 9x11" and 1/8" thick on a lightly floured surface. Cut the pastry in half and create a rim (frame) around the pastry by folding a half inch back onto the pastry and pinching it into place. Thinly slice tomato and place on top of the phyllo. Dice oregano and thyme, and spread evenly on top of tomato. Sprinkle feta cheese on top next. Sprinkle a small amount of fine ground sea salt and pepper over the pastries. Put in the oven for 15 minutes or until golden brown. Cut and serve right away.
