I'm not a tomato fan so I swap out that out for avocado, yum!

Tonight I'm going to BBQ up a bunch of chicken breast that have been stewing in some marinade. Some corn on the cob magically appeared in the fridge so those buggers are going to get cooked up too.

Never thought to swap for an avocado. Thanks for the idea Darrin. I'm firing up the grill too but just for the corn, can't fix it any other way!

Chicken tenderloins made in the oven, garlic, onion, chilipowder, on a bed of romain lettuce, a huge pile of cherry tomatoes out of the garden, an avocado sliced with lime juice and a big blob of sour cream....

There's two of us and 8 chicken breasts, we'll have our dinners done for the rest of the week. Beats the heck out of firing up the oven every night when it's hot.
