I paid takes for a while when I worked for the forestry but that was several years ago. My family never taught me any of this stuff and I have no clue how/ what to do.
I did take a financial literacy class so I know how to fill forms out and get percentages but that's about all I learned

One of the problems is that my grandpa doesnt want to document it because he will also be taxed or so he said at least. Although im not really sure.

Then do that and take it to an accountant, or take a class. You'll find there will be lots you can't do if you don't have documented income...

I did take a class on financial literacy but it didnt teach me how to document my pay. And im guessing my grandpa doesnt pay taxtes which is why he doesnt want it documented.

That's not right, your grandpa should be paying taxes. Take a class and learn how to document your pay, or ask an accountant.
