Rough textured coronary band growth

I rescued a percheron about seven months ago. She could barely walk and had slipper foot. She also had a split that folded in up to her coronary band....looked like a banana peel. She abscessed for two month and we weren't sure she would ever recover from being lame. After x-rays, it was determined that her bones were fine, no rotation or founder but had very thin soles. In the meantime, she has recovered wonderfully. The crack has almost fully grown out without further disruption at the coronary band. Her soles have thickened. However, all of the growth coming down from her coronary band is not smooth....it is quite textured and even flakes off in pieces at times. She is on turn out 24/7 and gets alfalfa and all she can eat grass hay. Thought it was because of the dry soil here in California...however, I would apply hoof conditioner and she also gets turned out to the grass area where we keep moist to grow grass. What is this and what should I do to make her hoof horn more smooth? Farrier comes to trim again in two weeks. Here are some pictures of her progression.
