I thought your plans were to breed for jumping? Friesians are NOT a jumping breed. What exactly is your goal with starting a breeding farm?

People with true credibility and integrity don't need to tell other people how great they are.

I am actually interested in Jumping or Dressage. Whichever breed I settle on will decide the dicipline. If I decide on Friesians in the end, I will focus on Dressage.

There is no reason you can't pick a breed that does both. Many warmbloods excel in both disciplines. It would be more of an asset to train, breed and show for both disciplines. A lot of people like horses who are multifaceted, plus it will bring you more money.

Dutch warmbloods were my first choice because they could do both Dressage and Jumping. My problem if I don't quite understand the 'open studbook'.

Well since your not going out and buying a stud tomorrow, you'll have plenty of time to research. I'd worry about actually training and showing some good horses before you worry about studs. A majority of your money will probably be coming from training and boarders (etc), not from your stud. Breeding is/will most likely be a money pit.
