What would you get if you bred a bay to a grey?

Depends entirely on the genes that the bay is carrying (one copy of agouti or two? one copy of black or two?) and what the grey is hiding under it's blanket of grey (agouti? black? red? cream? anything could be under there). Then you have to consider if the grey has one copy of grey or two copies.

Regardless, assuming one copy of the grey gene, 50% of the foals would be grey.

It would depend on what the grey horse's base color is. Grey horses are born whatever color (black, chestnut, bay, palomino, appaloosa, pinto, etc.) and then get lighter as they age.

Breeding a grey to any color has a high possibility of producing a foal that will end up grey if it is heterozygous. If the grey is homozygous (GG) then the foal will end up grey.
