Choke - recovering - now what feed?

Our mare seems to be recovering and we are treating for potential pneumonia,
But what would you recommend to start back feeding her on?
What would you move onto once her throat and esophagus have had time to start to heal?
I am afraid to give her hay, per the vets suggestion, yet.
I thought I'd soak a LOT of alfalfa pellets until they are mush and feed that for a week and then start on a compelte senior feed for another week soaked into mush. . .and then move onto allowing hay and soaked Safe Choice.
