Well this summer I'll be getting experience at a local Ranch. I get to help feed, clean, wash, and care for the horses. In exchange, I get free riding lessons :). I also plan to go all year/seasons, not just summer, in case the owner needs help with the horses over the cold weather.

That sounds awesome. Just make sure you try to work in some volunteering directly with a veterinarian as this is what schools really value. Any and all animal experience is important of course, and this summer sounds like a great start for you. Other ways to get veterinary experience (if you can't get a job as a vet assistant) would be to volunteer in a clinic, shadowing vets, and the often overlooked research. I published a scientific paper with a research vet and my acceptance committee said that it held a lot of water. Not too many people have research on their resumes. It isn't what I want to do but a broad range of experience is always helpful!
