How Horses Eat

Ok I think I'm going a bit nuts here soo maybe you guys can help...
I'm sure a few years ago I read an article about how horses eat and it said that they have this thing in their muzzle that helps them pick what blades off grass they're going to eat. Have you ever noticed it? It looks quite funny but there's this thing in their muzzle that moves while they eat. I've begun to think I imagined reading maybe had a dream or something. Can someone help please lol If this isn't what this is used for can you tell me what it is used for? I've just always wondered cause it looks funny.
