my horse doesn't like to lock his knees sometimes

My 11 year old paint gelding does this thing where he doesn't like to lock his knees completely when he is standing
This problem start about 2 years ago after he had a terrible accident in the field resulting in two bloody punctured knees the size of baseball bats
They shake sometimes even if I have not ridden in days and other times they don't shake at all
I was just wondering if anyone else had any experience with this or any suggestions
I work at a race horse farm and I notice some of our horses have the same problem
And I notice that when I stretch his legs out good before I ride, and rub them down real good a couple times with absorbine or things of the sort, or use boots for tough workouts it makes a tremendous different and his legs don't shake at all
And input, stories, suggestions, or information would help me tremendously
