Really? How so? I would assume they make it easier for soft feet because there isn't anything underneath damaging.

They make it easier but only while they are on. Because the inner part of the hoof isn't' enduring any pressure or touching ground even the frog will drop and become softened and less calloused and firm. That's why when you take a shod horse off shoes, they can bruise and may go lame if you aren't careful.

Abby gave a great explanation, but I thought I'd chime in with:

Think about your feet in the summer; the first day you take your shoes off to walk around barefoot it hurts, right? But after a while you build up callouses and get de-sensitized...
