My chiropractor/ vet showed me stretches for the horses legs and stuff, to target the hip and shoulder. I know it seems to feel good, but does it really help anything to stretch them regularly?

Yes it does help. Just like stretching helps people. Muscles are muscles be they in a dog, cat, horse or human.

Regular stretches done CORRECTLY absolutely help. And if your chiro/vet taught you how, I would imagine you know the correct technique.
