Super picky eater

My boy who is 6 is a nightmare when it comes to feeding. We feed hay and normally just alfalfa and never had a single problem and one mare is 30 years old. Well my boy will only pick the leaf out and leaves all the stems all over his stall floor. I have tried straight grass, a 3 blend, grassy alfalfa....he will have nothing to do with anything not alfalfa and will again only pick out the leaf. He LOVES cubes but they are cost prohibitive and too much of a hassle and I always worry about choking. I was wondering if anyone else has a picky eater and what might have helped? I have tried leaving it and not giving him more but the issue is he needs addtl weight still as he was thin when I got him so I hate him to miss feedings although if left long enough he WILL eat most of the stems. I had his teeth floated thinking that was a possible cause but no change at all :( He is very healthy and has in fact put on between 200-300 lbs since I got him but I just feel like I am wasting so much hay as I am always cleaning out all these stems and replacing it with fresh stuff and as everyone knows....that ain't cheap plus I worry about what he is missing if he is just getting leaf.......any ideas?
