I remember reading that a large percentage of horses have ulcers. If a horse is eating pellets and hence not a lot of saliva production as compared to eating hay. is there a supplement to help with this?

A supplement to make them salivate or a supplement to help manage ulcers? There are plenty of the latter: SmartGut, U-Gard, Ulc-R-Aid, etc.

I am not sure if there are supplements to make a horse salivate more though. I'm thinking the closest thing would be to add a salt or electrolyte supplement to the pellets to make sure that the horse drinks more.

It actually has much less to do with saliva than actual fiber going through the gut to keep the stomach acid from burning holes in the stomach lining. Pellets aren't a lot of help for that. Pellets don't take long to digest so the stomach is sitting empty but still producing acid. THAT causes ulcers.

You can use Slippery Elm Powder as Maintenance. Something with Brewers Yeast and Psyllium Husks will help also. If you are worried I would get your vet out as a course of ulcerguard maybe be required. Also try to steer clear of grain based feeds.
