Critique My 2 Year old AQHA Filly

This is Ruby my 2 year old filly, she's around 13.3 hands right now, she officially turns 2 June 15th. She's my little barrel prospect, I bought 4 months ago. She's kinda chubby right now, but she doesn't do to much other than amble around the pasture or get lunged sometimes. I know she's cow hocked, and she has a bit of a parrot mouth. I plan to show her in halter at fair this year just to do something with her. But critique away and be honest.
Here's her pedigree as well

I think she's really cute! I love the shape of her neck, and she looks very proportional all around. I like her!

What is 'parrot mouth'? I'm a little clueless on that term.

parrot mouth is when the upper part of the jaw sticks out over the bottom, like an overbite in a person. The opposite is called monkey mouth I believe, where they have underbites.
She looks sickle hocked, but she is very cute.

She is severely back at the knee, and I worry about the soundness implications for that in her future. If you ever ride her, I would never push her as an athlete. Then there is overall light bone, steep croup, and the aforementioned sickle/cow hocks. I do like her neck, and her head is quite pretty.
