She's a cute mover, but she looks a bit speedy to me all the way around, on the flat and over fences. Lots of transitions, collection, gymnastics, same things other posters said.
Maura, I wasn't sure if you were opposed to PVC altogether or just on the cavaletti parts of the jump? I've never used the solid cavaletti for jumps, but most of the barns around here use nothing but PVC poles now. Much more cost efficient, easier to move around, and last forever without needing paint. As far as them bouncing, I don't notice them doing any more than traditional poles do, if they're used in properly set jump cups. Even when they fall they don't go anywhere but straight down. I would definitely worry about turning over the solid cavaletti, though, if she rapped it too hard.
