Fun stuff to do with an older horse?

What are some fun things to do with an older horse that doesn't require jumping or gaming/running? I was thinking something with obstacles and some more advanced trail and possibly cattle work. Is there anything else that would be fun to do other than the basic riding stuff? I need ideas.

Look up some horsemanship patterns, and practice those. Change of gait, timing, turns on forehand, haunches, all done at certain spots, using cones, etc. Very mind occupying.
