I have a pair of rust breeches and LOOOOOOOVE THEM!! I get compliments all the time! They're by ariat, a fantastic reddish rust (not orangy) with black piping down the sides. I was going to wear them in a George Morris clinic I did a few months ago but chickened out....
I want rust breeches SO BAD...ehem. But yes hair ALWAYS goes over the ears in the hunt ring! Even though it drives me crazy too... I would never do it any other way.

Back in...ohhhhh...1995 when I was showing AHA shows, I wore rust breeches!
I was 12! I remember my first A show, I was entered into an Open HUS class. Yes, OPEN.
I was riding with not one person under the age of probably 20 and they were all on their high dollar flashy horses and here I was little 12 year old with rust breeches and a 17" saddle (that was probably at least 3" too big for me) on our backyard gelding.
