Tie versus stock?

So, I was in the situation of being needed to ride a horse in a show class pretty last minute the other day, and I was being kitted up by the horse's owner and a mutual friend who was with us as I hadn't brought my show gear. Our friend lent me her stock, and was confounded when I admitted to never having worn one before and not knowing how to tie it. She told me that 'ties are for children, adults should wear a stock' - however, I was sure that whilst a stock is correct for dressage, it's not correct for showing. What is the situation - when are stocks suitable versus ties? Am I ok sticking with my tie when all I compete with my horse is unaffiliated eventing and showing (hunter classes)?
