Just so you know, I've found that my Aussie saddle from DownUnder is a little narrow (the tree is set at "wide") for my exceedingly wide Arab so I have doubts that it would be wide enough for your draft. It fits my Arab perfectly through the back (very flatbacked and wide) but her shoulders are just a smidge too wide for it. It isn't bad enough to cause her issues but it might for a bigger horse.

That being said, my Aussie is SO comfy. It's my favoritest saddle ever. If one works for him, I definitely recommend it.

Of course, DownUnder might have draft options, I've just never needed to look into them.

I also have a library of saddle pads now, none have solved the problem.
Full QH Bars with a 7" Gullet have a bar angle of about 91 degrees, a Draft Tree has a gullet of 7.5" and range in a bar angle from 93 to 95 degrees, this is called a flatter angle because Draft Horses are generally so wide and have flatter withers.

Too narrow/steep of a Tree cause the Saddle to perch/sit on top and have less contact with the Horse causing the Saddle to rock and roll

I have gone through this, I was looking to see what the responses were!

My mare is half your pretty horses size, but its relative. She is not arab, but has an "arab back", ya can just roll right off of! Sooo, I got her a saddle (western) w an arab tree. Then, I put a roper cinch on it, my theory being there is more surface area contact. And, I always use a breast strap...which is a pain, but does help. And, while all these measures have helped, it will never be like "normal". So, I am just extra careful about keeping my weight balanced.
