English saddle with wide gullet channel

What are some brands of saddles to look at with a wide channel all the way to the back? Everything I have looked at just narrows towards as you go towards the cantle.

Look into Passier. I've got an older Passier jumping saddle with an extra wide channel, and it's evenly wide all the way to the back. The same applied to my previous saddle - a Kieffer GP model.

I have an Albion and the channel stays pretty wide all the way down. About the only thing that I don't like about it is the seat is too big for my butt.

In general, the older models will have that narrowing channel to some degree - some worse than others. Newer models tend to all have a pretty wide channel all the way down. I had a Kieffer Aachen A/P made in 2002 that had a nice, wide channel all the way. Older Kieffer Aachen A/Ps seem to have a slightly narrowing channel. Also, in general, dressage saddles have a wider channel than A/P and jump saddles. You didn't mention what style saddle you're looking for.

So rather than telling you which brand to look for, I'd rather say that if you're looking for an older model A/P or jump saddle, they're going to be hard to find with a wide channel. I have a Passier A/P towards jumping saddle from 1976 that has a decent channel. My Stubben from 1982 also has a good channel. If you're looking for a dressage saddle, you really shouldn't have much problem regardless of vintage.

Preferably CC or AP. I am just going to trail ride in it, so not set on one thing. I don't really care for dressage saddles, but I am not completely ruling them out. I am just finding that almost every saddle narrows towards the back, yes not as bad as the older models, but still do. I really like the schleese saddles, but they are out of my price range and primarily dressage saddles.
I am currently riding him in a barrel saddle, because its what fits him. But it puts me in a terrible chair seat, which is not helping my own back or my horse's.

Just as an example: Here's a picture of the channel on my 1982 Stubben Siegfried A/P saddle. No narrowing. That's a saddle that puts you in a great position, secure for trails, easy to find at a reasonable price. It is hard as a rock though, so for trails I'd recommend adding a sheepskin seat-saver or something with some cush to it.
