Look at the Rembrandt with the adjustable tree - very well made saddle. Here's a pic of my horse with it on him:



This is the website of the lady who makes them now:

Classic Saddles or the old Rembrandt Saddles

The one in the picture, has a key, that you use to widen or narrow the saddle. Very nice! Pricey, but nice!

Then there is the Collegiate Convertible Dressage Saddle. That saddle is leather.

I have a bates saddle and I love it. They are very comfortable (air filled) and can be easily adjusted.

I saw this at the last tack swap I went to!!! The asking price was $600 and I didn't have enough cash with me so I had to pass it up :( I LOVED it though. I sat on it and it fit like a glove. If you ever want to sell yours.....

I have a brand new Klimke on trial right now and am really liking it. It's completely adjustable, the panels are really, really soft which is great for a changing horse and extremely it's comfortable for me as well.

Only bad thing is that it's new so there aren't any used ones to be found. I like it, just not so sure on the price tag for it yet.
