I would recommend looking for a used, quality brand saddle. I bought a used Prestige Red Fox for jumping a couple years ago and I LOVE LOVE LOVE it.

Look for used Toulouses, Stubbens, Pessoas, older Collegiates, etc. If you can find something for $800 or so, put the balance towards a fitter so you can find the best match for your horse.

Go for a used quality saddle, and definitely work with a saddle fitter.

I second the looking for a good brand used saddle, and getting a fitter out. I've ridden in a Toulouse, and liked it, I also like Pessoa's and Stubbens, though my favorite saddle is my Amerigo Farouche, but it's pretty pricey, even for a used one, though you can always just see what you can find. Also if you can do trials, to see if the saddle fits your horse, or how much adjusting it may need, that's always helpful. Good luck.
