So I brought home two saddles on trial that had a wider gullet channel then mine. I didn't like either after riding in them. That said, I put my saddle back on and assessed the channel while seated.
I discovered that while my channel not only tapers, but also just clears the spine per my measurement from the ground, I was evaluating my saddle in the wrong spot! I was measuring with my fingers directly against the bottom of the saddle seat (because of the way Schlesse runs his fingers up the channels in the video) NOT where it actually touches my horse at the bottom of the panels - which is not only wider, but appropriately WIDE ENOUGH!
While seated in the saddle I was checking against my horses' back which is where the bottom of the panels are, not the underside of my butt! And while seated, my panels actually expand out into the correct spot. (Apparently other saddles do that too).
So I don't need a new saddle (WOO HOO)!! Which is good because after trying those 2 saddles (Prestige & Amerigo) I discovered how much I LOVE LOVE LOVE the way I fit in my saddle - a Hulsebos.
