saddle pad question

Old saddle wasn't fitting properly, had our mare fitted by a saddleshop and it appears to fit pretty well. Hubby is a bit of a heavier rider and went out Sunday using his 3/4" Toklat wool pad. The sweat pattern was dry where the saddle made contact and wet around the edges. I am thinking maybe the pad is too thick? Yesterday I took her out as an experiment with an old maybe 1/2" foam professinal choice I had but not used in years. She had a perfect sweat pattern, but I am wondering if that is enough protection for her? My plan was to get a 5-star pad but is 1/2" really enough to protect her? She is built a tad downhill and I could feel that a bit and saddle is a 17". Looking at it from the back it sticks up like a V which doesn't look right and I used the backstrap as well. any advise or comments, I want to get her new pad in the next couple weeks. thanks all. At first I thought it might be a good thing, completely dry under a prof. fitted saddle. Then saw that tipping/popping up in back is a concern.

Today my 200 lb son was riding using the same foam pad I used yesterday, Same pattern as the wool pad. I hate being this confused. Am wondering if the saddle is too narrow on her back even though it seems to fit in the front. The hair did not look ruffled, it was pretty smooth. Could it be the way each rider sits? Her back is pretty wide.
