Talking which saddle would be best for me?

I'm an english rider. And in time want to buy a saddle. (hopefully with in the next few months).and i'm wondering what brand and model would be best for me. I need a kiinda specific saddle with certain things like

. Needs to fit almost any horse
.needs to have good support (i'm having some trouble with the canter)
. Also needs to be good for jumping.
.can't be too teribley expensive (i'm leaning towards used)
.needs to last a long time (i hear the stuben's are very durible and french made saddles too)
.also I have no idea what size saddle I would need (i have never bought one) or how to figure out what size of saddle I would be needing

At the farm I ride at they have some saddles that look a lot like the old model pessoa that are pretty comftorable but I hear the new Pessoas aren't all that good.
