Also wanted to put out there, that at least in my neck of the woods, and hopefully lots of other places too, there's a saddle fitter, who basically comes out, and as long as the saddle is wool flocked, can help adjust the panels to fit your particular horse. Here its pretty cheap, $50 to come out and fit a saddle, but that might be something else to keep in mind, if you find one that fits you but maybe needs a little tweaking to fit your horse, find a wool flocked one (less expensive than the flex trees people are telling me about), and I'm sure someone can come out and reflock it for you. That's currently what I'm trying to do, and having a heck of a time doing it lol. I've got a very wide backed Arabian, and I've always had TB type horses with high withers and spine, that hold saddles in place really well fitted right, and my Arab's back most definitely doesn't.
