Can you not contact the previous owner for details?
How old is the mare?
What do you want to do with her?
Personally, if its an unknown quantity, I'd get teeth checked first, and speak to the dentist too. Some people whack a thick bit in a mouth, thinking this is kinder. Sometimes, yes, but if the horse doesn't have the room in his mouth, he can try to push his tongue over the bit, or hang his tongue out the side of his mouth- this then causes the bit to be uneven- one side trying to get through a tongue, the other side going on a gum. Not comfy.
I prefer to start anything, and ride anything in a snaffle where possible.
