Ovation Evolution XCH for a narrow TB?

I have an older, narrow TB with high-ish withers and I don't want to get him a fixed tree saddle as he may retire in the next few years and then I'd be stuck with a saddle that fits only him.

I have been looking at the Ovation Evolution XCH (interchangeable gullet version) with the long flap (I'm pretty tall with long legs) and wanted some feedback on the interchangeable gullet... Does it still work well with the narrow plate on a TB or otherwise narrow horse? I know sometimes the interchangeable gullet saddles can still be awkward on narrow horses even if you are using the right gullet plate. Link to the saddle below:

I was also considering the Collegiate Convertible Diploma (long flap again) but have heard the leather is not so great, but could possibly overlook that if it works well on TBs. I considered the Senior Event too but I think the flap isn't forward enough for my long legs, plus I have heard the seat is too deep for jumping over 2' comfortably. Also heard same complaints about the leather since Weatherbeeta started making them.

I can't bring myself to go synthetic, I hate the way they look, so unless it's the most amazing saddle in the world, would prefer only leather saddle recommendations (under $1500 too if possible, hehe)!

Please let me know your thoughts, his current saddle is not super comfortable for him anymore so I want to find the right one ASAP. I attached a pic of his back in case it helps.
