First, if you have a signed contract you need to review it and see if they list any 'proper' ways to contact them about giving a 30 days notice. If not the best way is in person.
If they question you as to why you are leaving it could be best to tell them the truth. However if they have shown they cannot be trusted or calm in any kind of situation it is best to just give them a neutral bland excuse of ' I found a barn closer to home.' or something similar to avoid conflict.
In writing. Signed and dated. Make a copy for yourself. Make sure it has been received. Smile and be professional and friendly.
You are under no obligation to say why you are leaving. Keep it bland, especially if you are leaving because of something negative about the barn. The horse world is a small one, and you may very well have to deal with them again some time, in some way.
