We just have a thing of bit sponges next to a bucket of water. The water gets dumped every day and fresh water is added, and the sponges are used strictly for bits. They get washed out every day with soap and water. This has never been an issue to use just this!
I never wipe bits at all after use. I don't know anyone that does. The only time I clean a bit is if I buy a used bit. Then I wash it good because I don't know if the last horse was sick or something. Must be an English riding thing? I have never heard of a western rider wiping bits.
I was taught that if you don't remove the gunked on hay/grass goop that builds up on the bit, it hardens on there and can eventually chafe the side of the mouth and cause sores.
All of our seats clean the bits after riding. Western, English, and saddle seat. Would you want something with dried food and slobber put in your mouth?
