Horse treats and cake!

Hi guys, my horse's birthday is in a month, and I want to find a recipe for her birthday. I really want something we can both eat without it hurting her or me choking it down. Preferably, I would like a cake, but cookies or treats work as well. I have found a couple cakes that were meant for humans but were made by all-organic health crazy people (how can they do that?), so I think they would be okay for Pepper.

A small slice of carrot cake no icing? I would substitute the sugar with applesauce, actually you can do that with a lot of recipes to make them sweet but healthy.
