Horse veggie patch. What should i grow??

So i'm thinking of growing a veggie patch!! And i want to add in a little section for horses. Even though i don't have a horse, it would be nice to keep some handy as a lot of people own horses near my house, and i'm thinking of doing up a little horsey herb thing up for my instructor and horsey friends. Plus when i do get a horse it's already set up. Any ideas on what i should grow???
