Question How to help this mare gain muscle?

I'm new to this so I apologize if I put this in the wrong area.

Anyway, my trainer just bought six OTTB’s that had been previously not worked, standing in a pasture for over a year. So most of them need to gain weight and quite a bit of muscle. A few days ago I met the mare I'll be working with a few times a week for a while. Her name is Zuri and she is 7 years old. She needs to gain more wieght and muscle. I took some random pics of her, so I'll post a few.

So what I want to know based on these pictures is how much weight do you think she has to gain? How much muscle and where? Since she's going to be used for jumping and I'll be lunging and riding her a lot what type of things can I have her do that will help her gain muscle in the areas she needs it? - (Trotting over cavalettis, etc)
