Knight and Princess gymkhana costume?

Hey guys!!
I wasn't exactly sure where to put this, so it put it here...
I'm going into a gymkhana with Cheyenne in October (probably. If I'm not going to that then there will be a costume class at the show that I'm going to) with a friend and there's going to be a a costume class. We decided that we'd do a partner costume and we'd be knight and princess. She's going to be the knight since she has a black horse and I'll be the princess (Cheyenne is sorral). We need costume ideas though. Like, how are we going to do this? She has a dress that she's going to lend me, but what do I do with Cheyenne, and what does she do for the knight? I'm sure we can find a knight costume somewhere but it's mostly the horses that we're having trouble with. At first I thought of tin foil for the knight but that's probably too reflective, and too hard to move in and it might scare the horses. Well, any suggestions?

History of Horse Bards and Tack

Here are some paintings of knights with horses wearing barding. Some of it looks more like just cloth so if you know someone who sews they may be able to make something similar.
