Need Horse Cake Help

So my horse Twinkie is my absolute pride and joy, well his birthday is coming up on the 12th of this month and I want to make him a cake.
I read a few recipe's online but still Im not satisfied, I want it to be good for him, and sweet at the same time but not a ton of sugar because I dont want to upset his stomach. I would like to be able to write 'Happy Birthday Twinkie' on the cake but idk whats horse safe that I can do that with. So suggestions would be awesome, pics of your cakes if you made some, ingredients you'd use ect.

Also its my other gelding 'Chances' birthday on the 13th, the day after Twinkies so I want to make this cake for both of them, Chance is turning 21 so he's a little up there in age and should be considered when thinking of ingredients.

Ingredients I was thinking of using,
Apples.
Carrots
Peppermints.(Twinkie Loves Them but Chance hates them)
Some type of sweet grain(suggests please)
Molasses or Pure Honey(???)
Brown sugar?

Sweet Potatoes( I could mash this and write on the cake with it but is it good for horses?)

Any help is awesome and appreciated :]

OH my goodness I was just looking for the same thing!! My mare's birthday is the 13th, too, and my colt will be a year old on the 31st. I wanted to make cakes, but everything is for cookies or sweet feed treats, and they already get sweet feed anyway :P

I did see something that called for those rice cakes that Quaker Oats makes (only brand I could think of) covered with molasses and sprinkled with grated carrots and what not-- I was thinking about expanding on that, using the rice cake as a base. Though IDK if those are really horse safe.
