The above suggestions are very thoughtful. For the rest of us, who don't need to personalize, I see gifts on the online horse catalogs (like StateLineTack or Horseloverz) and others, that I would NEVER buy for myself, but would love it if somebody else bought it for me. **sigh** (...nobody took the hint...)
Btw, I've transplanted many fruit trees in the fall on my property--2 Montmoracy cherries, one pear, one Johnathan apple--even as late as November, and they've taken very well, even though the experts tell you Spring is the best time to do so.

Maybe a barn sign for emergencies that has vets' phone numbers, farrier phone numbers, normal resting heart rate, temps, etc. Something she could fill in (phone numbers), that if she had some kind of emergency, she could glance up at it and get the info she needs? Or a sign that has HER emergency contact info, plus an alternate contact, etc. You know, "There are 2 horses housed here. (descriptions) The owner of these animals is xxx, can be contacted at xxx. If not reachable, call xxx at xxx." In case something happened to her animals or property (barn fire) or something.
