Resources for learning how to flock saddles and such

I'm quite interested in saddle fitting, mostly the flocking part. I don't want to do it as a career or anything, but I would like to learn about how to adjust and reflock/restuff saddles for my own interest. Unfortunately, especially in Australia, there seems to be very few courses on this, and the courses that do focus on saddle fitting are pretty much the chuck it on, check a few things and pass or fail it, rather than learning how to correctly adjust the fit of the saddle.

So I was wondering if anyone knew of any books or dvds that taught or explained this process?

I was thinking of asking a saddle fitter to show me, but there appears to be no good saddle fitter in my area which is rather disappointing. I knew of a good one where I used to live, but he was a jerk and I wouldn't want anything to do with him now.

On a side not, I'm also interested in basic hoof care, ie trimming and filing (not shoeing so much) are there any books or dvds on this subject too?
