I'd go with english pleasure in just local club shows, actually. Start lunging him with the bridle. If he still doesn't like the noseband loosen it so it's not so tight, Gradually keep tightening it while you're lunging him. He'll learn to deal with it.

Depending on his conformation as well, I'd look into showmanship classes.

Hmmm, have you thought about competitive trail??? If he's really spooky that's probably a bad idea, but you can do a lot of things and get him used to stuff...... just an idea
