What kind of science?

Physics: The physics of riding particularly jumping
Horse Jumping Physics
How much forces do horses exert. (i did this for my physics class)

Biology: project on horse learning or memory (That is what I did for my project), types of feed and effect on horse, How Does Grooming Affect a Horse's Heart Rate, if you want some more ideas that are biology based I think I still have my list somewhere when I was deciding what to do for my project. Just shoot me a PM.

You could try something with what color water buckets horses perfer. Maybe place an apple or something in it and watch to see what bucket the horses prefer. Then you can make a graph. Horse are suppose to be able to see in color.
