Ages to teach your horse new tricks!

I'm having a hard time visualizing different age brackets of horses and want your opinions!

I know some horses can work into their late twenties and some not into their late teens but what about picking up and learning new sports or skills?

What age can horses just start to learn a specific sport/discipline?

What would you consider the "prime" age to pick up a new sport/discipline?

At what point does it get a little harder to do so?

I'm talking about new mental and physical tasks and picking them up as best as the horse can within it's build and frame and athleticism. Specifically switching to/starting dressage, hunter jumper, eventing, roping, reigning -- any specialized sport like those.
