    Hey there,
I've heard the term backing a horse, but what exactly does that mean?

Backing a horse can mean two things, depending on who you are talking to:

1 - getting on a horse for the first time or first few times in its training.

2 - having the horse walk backwards while either being ridden or from the ground.

Getting one used to things, and eventually people, on its' back.

Perfectly logical question. Used to be more common in UK and Europe, gaining in use here in the States.
