collection training

I have a 13 yrs old gelding.he has been a trail horse all his life.probably ridden western most of the time but he knows english.
I am trying to train him to collect.i have two problems:
1-when I hold back the reins and apply leg pressure he goes (he never has a problem going faster) but resist with his head. And not submit.
2- when can I tell if he submits to the bit? Is it just by seeing his head go down. I know collection is round back, lifted shoulder ,lower back end ,and surge from the back.i can't seem to feel any of that .may be because he never does collect, and it could be just because I don't know he is doing it.(that is what I think happening. It is me not knowing or not doing it right)
Is there an exercise to train me to see the difference when my horse is hollow and when he is round????
